The Gnocchi That Landed the Job

Chef Andrew Kelly, originally from Dublin, secured his position at Violeté with a standout dish: his gnocchi. Co-owner Reuben Major recalls that Kelly was the first candidate to interpret the brand through food, and his gnocchi was so exceptional that it ended the search. The gnocchi, tossed with pecorino sauce, grilled asparagus, crispy guanciale, and fried lacinato kale, is a testament to Kelly's skill and creativity. The vegetables change seasonally, ensuring freshness and variety.

Chef Andrew Kelly's Background

Kelly brings experience from Michelin-starred kitchens in Dublin and a three-month stage at Noma in Copenhagen. Despite recent controversies at Noma regarding staff treatment, Kelly values the work ethic and respect for ingredients he gained there.
