The Three-Round Culinary Challenge

To claim the coveted gold medal, Chef Jay Park successfully navigated through three distinct and challenging rounds:

  1. Mystery Wine Challenge: In this round, chefs were presented with an unknown bottle of wine and tasked with creating a dish using local ingredients that would perfectly complement the wine. This had to be accomplished within strict time and budget constraints.
  2. Black Box Challenge: This intense one-hour test required chefs to prepare two plated dishes using a surprise selection of ingredients revealed only at the start of the challenge.
  3. Grand Finale: For this culminating round, chefs presented a signature dish that they had developed and refined over months of dedicated preparation, serving it to both judges and guests.

  • Grand Finale Dish: Titled "Jay Park's Journey," this signature plate featured Wingtat Canada chicken 'poulet pressé,' gochujang gastric glazed chicken heart, a crispy chicken skin 'tartlet' filled with chicken liver mousse, and chicken jus enhanced with garlic thyme chicken fat. This dish artistically narrated Park's personal journey from his origins in Korea to Vancouver, and from culinary school to his current role as Chef de Cuisine at Boulevard.
