From July 10 to 12, Jonathan Rogers Park in Vancouver transforms into a vibrant multicultural fiesta as Carnaval del Sol returns for its 2026 edition. The festival, organized by Latincouver, features over 350 artists and performers, including headliners such as Mexico's reggae crew El Gran Silencio, Chile's Villa Cariño, and the Dominican Republic's Fulanito. Alongside music, sports, and cultural plazas, the event offers 15 food vendors serving street food from Mexico, Chile, Brazil, and beyond.
Chilango Mango

Menu: Fresh mangoes carved into fruit flowers, a popular street treat in mango-growing regions. These are perfect for strolling the festival but can be juicy, so grab an extra napkin.
El Saborcito de Cecilia Peruvian Food Inc.

Menu: Ceviche, the iconic Peruvian dish of fish cured in citrus and vinegar with vegetables. Peruvian cuisine is experiencing global popularity, and this ceviche offers a gourmet taste.
Los Guerreros Food Truck

Menu: A familiar Vancouver food truck, serving Salvadoran pupusas (corn cakes), taco bowls, custom beverages, and churros. Cinnamon sugar is a recommended topping for the churros.
Roasted Revolution

Menu: Inspired by Mexican street corn (elote), this local truck offers grilled corn on the cob with toppings like truffle and Parmesan, or vegan butter versions.
Romero's Artisan Food
