When Baan Lao Fine Thai Cuisine first opened its doors in early 2021 in the quiet suburban neighborhood of Steveston, some might have been skeptical about its potential. However, under the leadership of chef Nutcha Phanthoupheng, the restaurant quickly established itself as a culinary destination of international significance. The establishment has earned Canada's best restaurant title at the World Culinary Awards in both 2024 and 2025, while also securing the No. 12 position in North America on the prestigious World's 50 Best Restaurants list.

Remarkably, Baan Lao represents Phanthoupheng's first professional restaurant experience, following her culinary training under chef Chumpol Jangprai of Bangkok's two-Michelin star R-Haan restaurant. Jangprai himself has acknowledged his former student's exceptional talent, stating during a previous collaboration that she has surpassed his own skills.

The special dinner event brought together three distinct culinary voices in Thai cuisine. Phanthoupheng collaborated with chef Pam Soontornyanakij, who operates the one-Michelin star Potong restaurant in Bangkok, blending Thai and Chinese culinary traditions. Soontornyanakij has received significant recognition, being named both Asia's best female chef and the world's best female chef by The World's 50 Best Restaurants organization in the previous year.

The timing of the event proved particularly meaningful, as the March 17-18 dinners coincided with International Women's Month. This thematic alignment extended to the beverage pairings, with sommelier Kelcie Jones selecting wines exclusively from women-led wineries to accompany the elaborate meal.

"We wanted to show how beautiful Thai food can be at a highly elevated level," explained Phanthoupheng regarding the collaborative dinner. "We are all different chefs. We cook Thai cuisine at a very high level but each in our own style. That diversity is what I wanted to show the world."

The planning process for this culinary convergence required six months of coordination to align the schedules of these in-demand chefs. The resulting menu represented a harmonious blend of traditional Thai flavors with contemporary culinary techniques and presentation.

Signature Dishes from a Culinary Master

Soontornyanakij contributed several standout creations to the 22-course progression, including:

  • A delicate potato massaman curry tartlet accompanied by puffed rice
  • Marinated squid served in a rich ink sauce
  • Mian fish maw, prized for its unique jellylike texture and skin-beautifying collagen properties, paired with morel mushrooms, nine different Thai grains, and shaoxing wine
  • For dessert, a pandan and coconut financier with coconut water sorbet and salted coconut sauce
  • A visually stunning salted egg yolk and white chocolate bonbon

The chef approaches her craft with a philosophy that balances heritage with innovation. "It's about respecting where the flavors come from while also refining them with precision and intention," Soontornyanakij explained. Her culinary methodology emphasizes the careful equilibrium of salt, acid, spice, texture, and the Maillard reaction—the chemical process responsible for browning and developing complex flavors in cooked foods.
