Chef Mackenzie Coombes brings expertise from Giulia, the popular Elgin Street pizza destination, as well as Gitanes and Restaurant e18hteen. Manager and beverage director Camille Hopper-Naud contributes experience from Supply and Demand, Fogo Island Inn, and Le Poisson Bleu.

"Our palate is very shared," Clark noted about her team's collaborative approach. Together, they function as a closely knit unit, executing their dream eatery with both passion and technical excellence.

Interestingly, Clark's initial concept for the restaurant centered on fish and chips, inspired by a beloved London establishment. "But it wasn't going to work, and Camille didn't want to smell like fish," she revealed with humor.

It speaks to the community, and staying close to home, having your rituals with your family. Those are always things that I stand for," Clark explained, highlighting the social and communal aspects that align with her values.
