The Colombian, with its five locations throughout Edmonton, has garnered this honor through dedicated effort and a profound commitment to quality and community.

From Market Booth to Continental Acclaim

Co-founders Santiago Lopez and Kristin Panylyk de Lopez attribute this success to intentional practices that extend beyond merely serving coffee. "It's not just about the coffee," Lopez emphasized. "It's about hospitality. One of the biggest things that we do at The Colombian is we want to make people feel special, and we want to use coffee as the catalyst for connection." This philosophy has resonated deeply with Edmontonians, fostering a loyal customer base that has been instrumental in their growth.

A Journey Forged Through Personal Tragedy

Lopez's path to becoming a top coffee roaster is marked by profound personal challenges. Originally from a family of politicians and lawyers in Colombia, he was forced to flee after his grandmother was murdered by guerrillas. Living as a refugee in the United States and Canada, he eventually settled in Edmonton, working as a carpenter and later as a general contractor.

A devastating car accident that left his son paralyzed a decade ago became a pivotal moment. "That put a lot of things in perspective for me," Lopez recalled. "I told myself I don't want to be doing things just for money. I want to be doing things that give me purpose." This realization inspired him to pursue his passion for Colombian coffee, aiming to honor his heritage and create meaningful impact.

Celebrating Colombian Heritage and Ethical Sourcing

The Colombian imports beans directly from local farmers and producers in Colombia, a network Lopez has cultivated over eight years. The shop roasts and sells over a tonne of coffee weekly, significantly benefiting the farmers involved. Lopez is passionate about showcasing the positive aspects of Colombia, countering negative stereotypes often depicted in media.

"I just really want to showcase the good things about Colombia so that people understand it's not about what Netflix puts on their shows," he stated. "I want to showcase the fact that people work extremely hard." This commitment to ethical sourcing and cultural representation has become a cornerstone of their brand identity.

Gratitude for Edmonton's Support

While the ranking is a significant honor, Lopez places greater value on the community support that has fueled their success. "We are extremely grateful for the fact that Edmonton has embraced us," he expressed. "I am very grateful that I ended up here because the community has been really supportive of what we do. That's why we are headquartered here."

Looking ahead, The Colombian has ambitious plans to expand across North America. However, Lopez acknowledges that their foundation remains firmly rooted in Edmonton. "We have big dreams of welcoming many stores all throughout North America, but at the end of the day, if it wasn't for Edmonton, we wouldn't be here today." This sentiment underscores the symbiotic relationship between the chain and the city that nurtured its growth.
