Two new Vancouver restaurants, Nui and Nabi House, are elevating Korean cuisine with modern twists. Run by young, passionate chefs, they offer Korean food for contemporary palates, reflecting the global Korean Wave.
Nui: A Modern Korean Dining Experience
Located at 4811 Main Street, Vancouver, Nui is open for dinner daily and lunch Tuesday to Sunday. Chef J.J. Hwang named the restaurant after his older sister, who supported him when they moved to Vancouver. His cooking is inspired by his mother's delicate and balanced style. Co-chef Kyle (Mac) Mcintosh joins him from A-OK Commissary.
Hwang says, "I want Nui to have its own style. Our soul is rooted in Korean but not limited by it." The menu incorporates Thai, Italian, and Latin flavors. Signature dishes include gomtang ($23), a pork bone broth soup with noodles and tender pork shoulder, and tofu egg jjim ($12), a savory custard with soy milk. The dweji rice bowl ($20) features marinated pork and sous vide egg yolks.
Nabi House: Powell Street Gem
Nabi House, at 1889 Powell Street, is open Wednesday to Sunday for dinner. Chef-owner (name not provided) focuses on modern Korean cuisine with seasonal ingredients. The Perilla Chicken is a standout dish, showcasing the chef's creativity.
The Korean Wave has brought global attention to Korean cuisine, with Michelin-starred restaurants in New York and Los Angeles. Vancouver's food scene is catching up, with Jeju and Zoomak leading the way. Nui and Nabi House continue this trend, offering innovative dishes that honor Korean traditions while embracing global influences.
